Mild Cape Malay Curry
A delicious fruity, mild curry cooked in a sweet and sour gravy that the whole family will enjoy using our Nice 'n Spicy Mild Cape Curry spice pack.

Cooks: 4-6 servings
Ingredients:
- 1kg chicken pieces
- 3/4 cup vegetable oil
- 4 cloves of garlic crushed
- 1 small piece of ginger root grated
- 4 medium onions, finely chopped
- 3 large tomatoes, chopped or 1 can
- 2 Tbsp tamarind soaked in 1 cup water, or 2 Tbsp vinegar diluted in 1 cup water
- 1/2 cup dried peaches, soaked, drained, and sliced in quarters
- 1 Tbsp brown sugar (optional)
- 4 potatoes, peeled and cubed
- Salt to taste
- 1/2 cup fresh coriander, chopped (optional)
Cooking Instructions:
- Sauté aromatics: Heat half the oil in a heavy-based pot and gently sauté the onions and ginger/garlic for about 15 minutes until golden brown, taking care not to burn.
- Add spices: Add the spices from the top two layers along with the remaining oil, and stir-fry for a few minutes.
- Cook meat: Add the meat to the pot and stir-fry until well coated with the onion and spice mix.
- Incorporate ingredients: Next, add the tomatoes, tamarind or vinegar water, soaked peaches and sugar (if using). Check the sauce for sweetness and sourness, then bring to a boil. Reduce heat and simmer on low until the meat is nearly tender.
- Season and add potatoes: Add salt to taste then in the spices form the third later along with the potatoes. Continue cooking until the meat is tender and the potatoes are done.
- Finish dish: Stir in the spices from the bottom later and cook for a further few minutes.
- Garnish and serve: Sprinkle with chopped coriander leaves (optional) and serve with rice, fruit chutney, and fresh vegetable sambals.
