Biltong Butter

Biltong butter is a delicious, rich, savoury South African compound butter made by blending softened butter with finely chopped or powdered biltong, roasted garlic, coriander, and Worcestershire sauce. This flavour filled spread is typically used to elevate steak, fresh bread, roasted vegetables, or potatoes.

Ingredients

  • Butter: 250g - 500g salted butter, softened at room temperature
  • Biltong: 100g moist sliced biltong, finely chopped or grated
  • Garlic: 1 whole bulb, roasted
  • Herbs: 2 tbsp fresh coriander (cilantro), chopped; 2 tsp fresh thyme leaves
  • Spices & Flavour: 1 tbsp whole coriander seeds (toasted and crushed), 1 tsp Worcestershire sauce, salt, and black pepper to taste
  • Optional: 1 tsp olive oil (for roasting garlic)

Instructions

  • Roast the Garlic: Preheat the oven to 180°C (350°F). Slice the top off a whole bulb of garlic, drizzle with olive oil, and roast for 35 minutes until soft.
  • Prepare the Biltong: Chop the moist biltong into very fine, small pieces.
  • Mix the Butter: In a bowl, combine the softened butter with the roasted garlic cloves (squeezed from their skins), finely chopped biltong, fresh coriander, crushed coriander seeds, thyme, and Worcestershire sauce.
  • Season: Season with salt and cracked black pepper to taste.
  • Shape and Chill: Spoon the mixture onto cling wrap or baking paper, roll it into a tight log, and twist the ends to seal. Refrigerate for 1–2 hours until firm.
